Process



Our coffee is picked only when the cherries reach their optimal maturity level, leading to an exquisite sweetness. The cherries are pulped the same day and fermented naturally in basins until they reach the appropriate level. The beans are washed in clear water and taken immediately to patios to dry slowly in the sun. Turned periodically until they achieve the perfect dryness, the beans are then subjected to a rest period, concluding the process that ensures all of their characteristic attributes.
